Light Recipe - Ratatouille with Quinoa

The following recipe is ready in 40 minutes and yields three servings.
2 cups of tomato sauce
1 small eggplant
1 little red pepper
1 small orange bell pepper
1 red onion
1 tablespoon olive oil
1 teaspoon chimichurri
1 teaspoon thyme
1 tablespoon light curd
1 teaspoon of liquid smoke
In a refractory, put 1 cup of tomato sauce.
Arrange the cut vegetables in slices, interspersing them.
Repeat the process until the end.
Drizzle with olive oil.
Season with chimichurri, thyme, salt and pepper.
Cover with a parchment paper.
Bake in oven for 15 to 20 minutes.
Prepare the velouté by placing 1 cup of tomato sauce in a blender.
Add curd and liquid smoke.
Whisk until smooth.
At serving time, place the velouté on the bottom of the plate.
Arrange the ratatouille on top.
