I'll tell you the secret right away: itokonnyaku noodles have no carbs!
Taken from konjac root (typical of Japan), it is a food composed only of water (97%) and glucomannan (3%) - a soluble fiber that, during digestion, doubles in size in the stomach. With this, it satisfies easily, preventing you from overdoing more calorie foods. You can easily find it in eastern markets. Each package yields two servings of pasta, with an incredible 4 calories each. With sauce and all, a konjac pasta dish, as it is also called, carries only 100 calories.
But, attention! The nutritional value of konjac is low. It does not provide significant amounts of protein, carbohydrate, fat, vitamins or minerals. Therefore it needs to be combined with other foods containing these nutrients. Also avoid overeating. Because of fiber, it can have a laxative effect and thus impair the absorption of vitamins.
Although the indication is to do it Japanese style (with soy sauce and sautéed vegetables), I recommend using it as the basis of an Italian recipe. Already tested and gave supercerte!
