The following recipe is ready in one hour and yields four servings.
100 g sunflower seeds
100 g of nuts
100 g of Brazil nuts
150 g of dates
For the filling
2 cups avocado
2 tbsp culinary sweetener
1 tablespoon extra virgin coconut oil
1 lemon juice
1 tablespoon lemon zest
In a blender, beat the seeds, nuts and dates.
Arrange this dough in a detachable form lined with parchment paper.
Tighten with the back of a spoon.
Bring to cool until hard for about 40 minutes.
For the filling, beat the avocado, sweetener, coconut oil, zest and lemon juice until it forms a cream.
Place the cream over the dough and bring to freeze.
At serving time, remove the pie from the rim and garnish with lemon zest.
