Duck rice is an icon of Portuguese cuisine. There are many ways to make the dish, but my family tradition makes it the best of all.

The following recipe is ready in one hour and yields six servings.
2 tablespoons olive oil
4 garlic cloves
1 large onion
½ duck cut into pieces
2 tbsp yellow pepper
2 tbsp red peppers
1 minced pepper
1 teaspoon chimichurri
1 thyme branch
½ cup white wine
1 l of water
1 cup of rice
Pepperoni Sausage Chips to taste
Chives to taste
Salt to taste
In the pressure cooker sauté 2 cloves garlic and ½ onion in 1 tablespoon olive oil.
Add the duck.
Add the bell peppers, chile, chimichurri and thyme.
Season with salt to taste.
Add white wine and water and stir well.
Cover and cook for 25 minutes under pressure.
In another pan, saute remaining garlic and onion in olive oil.
Add the rice and add the duck broth.
Shred the duck meat and add to the rice and mix well.
Cover and cook until desired.
Garnish the portions with sausage chips, black pepper and chives.
