Ingredients

1 cauliflower
1/2 chopped onion
1 clove minced garlic
1 tablespoon chopped parsley
2 tbsp grated light Parmesan cheese
2 tbsp rice flour
1 egg
1 tablespoon natural yogurt
Arugula, salt and pepper to taste

Method of preparation

Cut the cauliflower rapiers.
Put them in a bowl and microwave for seven minutes.
Mash with a fork.
Add garlic, onion, parsley, cheese and egg.
Season with salt and pepper.
Add the rice flour and mix until the dough is homogeneous.
